Ok, you have inspired me. I saw the word "cupcake" and knew i had to experiment somehow. So I have created chocolate corn muffins. They could be a disaster, or they could be fabulous. I should know in 10 minutes or so....
No icing though.. i haven't found a recipe that i like.. they are all soo sweet.. I know i know - that's the point of icing, but i have been slowly loosing my sweet tooth. Shame that it is.
Hmm. Not sweet enough, but i took 2 to work for breakfast - i heated them up and mashed them with milk. that was actually pretty good. and easy to add honey to up the sweet content lightly. - Added bonus was freaking out my new coworkers - you did what? thanks for NOT sharing.
