Attack of the Killer Tomatoes...
Aug. 25th, 2008 07:05 amThe last couple of nights have been nice enough that the neighbors and Sweeties and I have been sitting out back in the yard a lot, next to the garden. I love my garden. It's a bit overgrown in places, and the morning glories are busy attacking the sunflowers, but the most interesting part is the tomatoes in the back. Peaty planted them for me, and they're currently giving me lots and lots of little tomatoes. Now the CSA I belong to is also giving me tomatoes. I'm starting to have a *lot* of tomatoes. Too many. And more on the way, every day...
Now, most days I can take or leave tomatoes, so I'm a little stumped about what to do with all these damn tomatoes, since I can't make them go away, oh no. I'm thinking salsa. And sneaking them onto my neighbor's porches. Or bringing some to Liz in St. Paul so she can hurl organic produce at the RNC next door. Nono, must be a good Maus...maybe I should just stick to salsa, huh?...
Anyway, anyone out there with a good tomato recipe? Before the yard is totally covered with little red tomatoes that whimper to be eaten, causing guilt and shame if they go bad? I want to treat them the way they should be treated, with respect. And maybe garlic...

* 3 large ripe tomatoes, peeled and seeds removed, chopped
* 2 hot chile peppers, Serrano or Jalapeno, finely chopped
* 2 to 3 tablespoons minced cilantro
* 1 1/2 to 2 tablespoons lime juice
* salt and pepper
Preparation:
Put chopped onion and garlic in a strainer; pour 2 cups boiling water over them then let drain throughly. Discard water. Cool.
Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4 hours to blend flavors.
Makes about 2 cups of salsa.
(you can use more tomatoes, less peppers, more garlic and I almost always use onion in this.)

10-12 basil leaves, whole
Mozzarella cheese, sliced
1/4 cup of balsamic vinegar.
On a large platter, arrrange the cheese between the slices of tomato with the basil leaves and pour the balsamic vinegar over it. Soooo, good. And you don't have to use the oven. ^^
