Rice puding just makes me happy...and last night I tried out a recipie for it that made me a very very happy girl. Yeeeees, it takes very little to make me a total spazz. But it helped me get through the day yesterday: "When I get outta here, I'm gonna make rice pudding with raisins and basmati rice and the whole house will smell like rice and hot milk and vanilla and cardamom..." And it did...

I love it when I cook something good and it fills my apartment with the delicious smelliness. I'm a little afraid Ben and Peaty will thump a ladder on the side of the house and bang on my windows, demanding some of the goods. (Peaty already knows when I make curry. Dang that Northwestern wind...)
I think tonight I'll be in horrible peril...I'm planning to make cupcakes again...

Aw crap, and I posted that. Now all of you will be ringing the doorbell with little cardboard signs saying, "Starving for Cupcakes, Please Help". I'll turn off the lights and pretend I'm not home:P

Ooo Ooo I wanna make rice pudding!!! Does your rice pudding recipe include cream? Cause the one I have does, and I can't find a dairy-free version of cream. So I haven't made it. :(

Hmmm...I think you need the milk to get the chemical reaction....but I wonder if you might be able to find a health-food instant pudding recipie you can add hot rice too and try it that way? I've never tried a Jell-o pudding with soy milk, but I bet that may be our answer...

Now I may have to try to find that now, because that *is* a challenge, isn't it? If I find it, I can make my mom rice pudding too, since she can't have dairy either...

Are you kidding? I made them because you were coming over...you'll be lucky to escape my house eating only five or six...

howzabout 6-thirty or so? I get home at about 6-fifteen...and maybe I can loot the Amy sedaris cookbook for a cheese ball too...hehhehhehhhh...

Sure! I have a peanut panaang recipie in one of my comments about.errr....five or six posts down? I think the post was about curry, so that should help...

I'll get some time this Friday or Saturday to post some different curry recipies if you hate peanuts:)

Hmmm...I bet I could try to break the recipies down a bit, adding in stuff you can replace things with...I know you can replace coconut milk with yogurt, or get a coconut from the store and scrape out the coconutty part and add some water. Kaffir lime leaves can be replaced by bay leaves and maybe a touch of lime juice. I must ponder this!! Meanwhile, tell me about what you can't get ahold of and I'll think of some other thing that'll work...

It was the lime leaves in particular that I am not able to get. The rest of the stuff will take some rounding up, and I even have a can of coconut milk in my pantry.

Bet you could use cashew butter, too. (If you could afford it!)
